A Hearty mutton biryani that will amaze your guests!Biryani is a dish that nobody can resist.Be it a dinner or any other special occasions, biryani seems to be ideal main dish to serve along with yummy raita.

This mutton biryani is made with seeraga samba rice,Which gives the delicious flavor, smell and taste to this biryani well.

Ingredients

  • Mutton (with bone)            -  1 kg
  • Turmeric powder               - 2 tsp
  • Chili powder                        - 1/2 tsp
  • Cashew nut                          - few(optional) 
  • Ghee                                       - 2 Tbsp
  • oil                                            - 1 Tbsp
  • star  anise                             - 1 nos
  • cinnamon                             -  1 - 2 inch
  • cardamom pods                 -  3-4 nos 
  • Few cloves                            - few (6 -7 nos)
  • Bay leaves                            - 3 nos (small size)
  • Onion                                    - 4 to 5 (thinly sliced)
  • Ginger garlic paste            - 1 tbsp
  • Tomatoes                             - 3 nos(small size) 
  • Diluted coconut milk         - 4 1/2  cups
  • Coriander leaves                -(as required)
  • Mint leaves                          -(as required)
  • Salt                                        -(as required)
  • Seeraga samba rice          - 3 cups (soaked for 30                                                                                                   minutes) 
For masala paste
  • Shallots                             - 6 nos
  • Garlic                                - 2 clove
  • Ginger                              - 2 inch
  • peppercorns                    - 2 tsp
  • Red chili                           - 6
  • Green chilis                     -2
  • Mint                                  - few
  • Coriander leaves           - few
  • Grated coconut              - 3 Tbsp
  • Coriander seeds            - 1 tsp
  • Little water


Instructions

  1. Make the masala paste from above given ingredients
  2. Marinate the wash mutton pieces with turmeric powder ,chili powder and salt. Let it sit for about 20 minutes
  3. In a pressure cooker, add the marinated mutton pieces, add water, 3 shallots , few garlic clove and add some mint and coriander leaves.
  4. Then pressure cook them in a medium flame for about 7 to 8 whistles.
  5. Transfer the mutton and use the mutton stock as a soup.
  6. In the pressure(2 liter size),Add ghee and oil and then add the spices and roast them well.
  7. Add onion and saute them well till the onion turn to golden brown (This golden brown color of onion will give you a good color, flavor and richness)
  8. Now, add the green chili and ginger garlic paste and stir up well till the raw smell leaves 
  9. Add tomatoes and saute them well(till it turns into mashed form)
  10. Then, add the one hand full chopped coriander and mint leaves and stir up well 
  11. Now add the Boiled mutton pieces.
  12. Then, add the soaked seeraga samba rice to it
  13. Stir up and add the coconut milk to it.Add salt to your taste.
  14. Check the salt and spicy in the biryani add if it required.
  15. Close the pressure cooker and pressure cook them in a low to medium flames for about 2 whistles.
  16. Let it sit aside till the pressure completely released.
  17. After that open the pressure cooker,add some ghee and mix them gently.
  18. Garnish!Serve them hot with raita!
  

Picture Instructions

    1. Marinate the mutton pieces with chili powder,turmeric powder and salt,Let it sit for about 20 minutes

 2.Add the mutton pieces to the pressure cooker and add required water to it
 3.Add four shallots , garlic clove and  few mint and coriander leaves to it and pressure cook them in a medium flame for about 7 to 8 whistles
 4.Soak the seeraga samba rice for about 30 minutes
5.Grind the masala paste
 
6.In a pressure cooker, add ghee, oil and all the spice ingredients and stir up well and add onion and green chili 
 7. Add the tomato to it and saute well .Then , add cooked mutton piece to the pressure cooker and add  chopped mint and coriander leaves to it
 8.Now, add the diluted coconut milk and add the required salt to it
 9.let it boil for about 2 minutes
 10. Add the soaked seeraga samba rice to it
 11. close the pressure cooker and pressure cook them  in a  low to medium flames for about two whistles
 12. Add some ghee to it and garnish and serve them hot
Serve hot with raita and Enjoy!😄
