Kurma is an everyday side-dish that often used in south India. Thus it is a good side dish for Chapati, Poori, Dosai, Rice, and Biryani. Mostly the kurma is made with the Potatoes, soya chunks, cauliflower, and green peas. This is a new trial I have made with the carrot. I will do this kurma once in a week for chapati or poori. It really tastes delicious and with a good aromatic flavor.

Carrot contains many good beneficial things like potassium, Beta carbonate, Vitamin A, K1, Fiber, Antioxidants. They are weight loss friendly food that contains low cholesterol and that they improve eye health.

Carrot Kurma 

Prep time: 15 minutes

cook time: 20 minutes 

Total time: 35 minutes 

Ingredients
  •  Carrot                         - 2 big no
  • Onion                            - 2 large 
  • Tomato                         -2 small
  • Green chili                  - 1 no
  • Cumin                           - 1/2 tsp
  • Cinnamon                   -1/2 inch
  • ginger garlic paste - 2 tbsp
  • Turmeric powder     -1 tsp
  • chili powder            - 1/2 tsp
  • oil                                  - as required(2 tsp)
  • salt                                - as per your taste
For masala paste
  • Coconut                - 1  1/2  cup(Freshly grated)
  • Cumin                   - 1  1/2  tsp
  • Cinnamon           - 1/2  inch
  • Fennel seeds       - 1  tsp
  • Cardamon           - 2 nos
  • Coriander seeds- 1/2 tsp
  • Red chili               - 3 nos
  • Peppercorns       - 2 tsp
  • Cashew nut         - 2 tsp



    Instructions
    1. Heat the pan and add the spices from the masala paste ingredients 
    2. Roast them and add the coconut to it.
    3. Roast them well till the coconut turn into brown color don't burn the coconut.
    4. Once over remove them from the heat and let keep aside.
    5. Grind them when it cools down.
    6. Heat the pressure cooker and add oil, cumin, cinnamon and stir up well.
    7. Add onion to it and saute well till onion becomes golden brown.
    8. Add ginger-garlic paste and stir up well.
    9. Add tomato and saute well till it comes like a gravy form.
    10. Now add turmeric and chili powder to it.
    11. Then add carrot to it then add required salt.
    12. Add the masala paste and stir up well and add the required water to it.
    13. Check the taste and add the salt and chili powder if required.
    14. Close the pressure cooker, pressure cooks them about 2 to 3 whistle.
    15. Open the pressure cooker once the pressure is released.
    16. Garnish them with some coriander leaves.
    17. Serve hot! Enjoy!

    4. Add oil, cumin, cinnamon, and green chili. 


    5. Add onion to it and saute well.

    7. Add tomato, Chilli powder, turmeric powder, and salt.


    8. Add carrot and saute well.


    9. Add the masala paste to it and the required water to it.


    10. Check the salt and add if required


    11. Close the Pressure cooker, pressure cooks them for about 2 whistles in medium flame.



    12. Garnish and serve hot! Enjoy!
