Eggplant fry/ Brinjal varuval

Brinjal is rich in antioxidants and contains many types of minerals. Thus it is great good dining for vegetarians. It is a simple and delicious side dish with rice and dal, rice and rasam, chapati and, curd rice.

My sister is a great lover of brinjal/ Eggplant. I have done this recipe especially for her. When  I am a kid, I am a great hater of brinjal😅 . Nowadays I come to know that making brinjal is really simple and tastes delicious. Brinjal that cooks faster and a great combiner for working women. Brinjal really tastes good😉 . I seeded in my mind. We can make any type of dish using the brinjal (like Deep fry, Gravy, chutney, Bajii and, Fry). 

It is a simple and easy lunch box recipe. This recipe is a quite spicy and good combo with curd rice and rasam. Let us see the clear view

Ingredients:

  • Brinjal/ Eggplant              - 1 big size
  • Onion                                    - 1 medium size
  • Tomato                                 - 1 small size
  • Chili powder                        - 1/2 tsp
  • Coriander powder              -1/2 tsp
  • Cumin                                    -1/4 tsp
  • Red chili                                 -1 no
  • Fennel seeds                          -a pinch
  • Pepper powder                     -1/4 tsp
  • coconut oil                              - 2 tsp
  • Curry leaves                           - as required
Instructions:
  1. Heat the pan and add oil, cumin and fennel seeds to it. 
  2. Then add red chili break them into two and add them to it.
  3. Add the onion and saute them well till it became golden brown.
  4. Add tomato to it and stir up well 
  5. Add chili powder, coriander powder and saute them well
  6. Add brinjal/ eggplant to it and stir up till it cooks well.
  7. Once the brinjal cooked well add the curry leaves and two to three drops of coconut oil. 
  8. Garnish with some curry and pepper powder
  9. Let it cook for about 2 minutes.
  10. Serve with rice and enjoy

2. Add onion and saute well.



3.Saute the onion till it becomes golden brown


4. Add tomatoes to it.


5. Add chili powder, coriander powder, and salt to it.


5. Add brinjal to it. Let it cook for about 15 minutes 

 6. Add pepper powder, coconut oil and garnish with some curry leaves.


Serve Hot! Enjoy!

Carrot Kurma "Hello! Always be happy and Stay Healthy " Kurma is an everyday side-dish that often used in south India. Thus it is a good side dish for Chapati, Poori, Dosai, Rice, and Biryani.
